Grand Granola::

{I'm linking to Jen's Tasty Tuesday...
check out her fun idea for a coffee bar!}

The beauty of this recipe is how easy and versatile (read: forgiving) it is
3 cups old fashioned rolled oats
1 cup sliced almonds, walnuts, macadamias or pecans
1/2 cup sesame seeds
1/2 cup shredded coconut, sweetened
1/2 tsp salt
6 Tbs brown sugar
6 Tbs maple syrup
1/4 cup canola oil
1 Tbs vanilla

Like I said, it is very forgiving. I used generic 'light' pancake syrup because that's what I had. I used vegetable oil instead of canola oil... because that's what I had. I've followed this recipe to the tee and it tastes just as good with the cheap stuff.
Don't like nuts? Leave them out.
Don't like coconut (Leslie), leave it out.
Prefer to make it extra healthy?
Add flax seed, millet, dried fruit, whatever floats your boat.
Well, maybe not spinach.

One batch will make this much: (a cookie sheet)
Sometimes I double it. Not today, I was scraping the bottom of the rolled oats barrel, literally.

Bake at 250 for 1 hour.
Stir and bake for 15 more minutes
I'm telling you, it is so easy. AND I usually have the ingredients in my pantry

My favorite way to indulge:
Activia vanilla yogurt, fresh berries and granola.

Just look at those golden flakes
Enjoy!

Okay, SERIOUSLY ... my husband will demand that this recipe is printed out and used! Thank you! What a cost cutter for our granola-lovin' family. (Costco just lost some money.)

Hey there! I've visited your blog before and thought I'd say hi. This summer has been busy and I haven't been reading many blogs, but was catching up on some of my faves tonight. We just made the decision to homeschool or son this year. I thought it was really neat that your family is starting on this journey too. I was curious what curriculum you guys are going to use?! (My name's Anna by the way :)!)

Yum! I can't wait to try this.:) I'm always looking for a granola that can be varied as I have one who is allergic to ALL nuts and another who is allergic to ALL dairy and eggs (Yes, I know, I have to be a very creative cook these days!). Thanks for posting this. I will be trying it this week (w/o the nuts of course :)). Miss you, My friend! Love to your family! Give your parents hugs as well!
