Crockpot Cobbler

I had a bowl of peaches sitting in my fridge looking more aged than Methuselah. Even with a few bad spots, I knew they were firm enough to be delish in a cobbler.

There's just something about using the crockpot in the fall. Since we've been having warmer-than-normal temps here in NC, I'm doing everything I can to encourage the feel of fall.
4-5 cups sliced peaches*
3/4 cup plus 1 Tbs. sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
3/4 cup plus 1Tbs. all purpose flour
2/3 cup old fashioned oats
6 Tbs. butter/marg. cut into pieces

Combine peaches, 3/4 cup sugar, 1 1/2 teaspoons cinnamon, 1 Tbs. flour and nutmeg. Pour into slow cooker that has been sprayed with cooking spray.
Topping: combine flour, 1 Tbs. sugar 1/2 tsp. cinnamon, and oats. Cut in butter with a pastry blender or 2 knives. Sprinkle over peach mixture.
Cover. Cook on HIGH 2 hours. Serve with ice cream if desired
*or 32oz frozen peaches, thawed and drained

It was very soupy, probably because I used fresh peaches. That's okay, more juice to slurp!
The cobbler was such a success, I think apple crisp is my next crockpot experiment.

I might just make this today! I have a bunch of peaches too. I think I'll try 1/2 splenda though to cut the sugar. I presume you used a smaller crock pot right? I usually use my huge one but I have a smaller one too. Looks delicious and I LOVE my crock pot!

Looks yummy!!! Just add a little corn starch to the recipe next time and it will not be as soupy. :-)

I just love peach cobbler but have never tried it in a crock pot. What a fun idea. I can't wait to smell it as I come walking through the door.

Are you serious? Cobbler in the crockpot? I never would have dreamed! My husband absolutely adores cobbler, so I know this will be a hit at my house!

I'm such a crockpot neophyte. I need to learn more of what can be done with this incredible little appliance!

My favorite crockpot recipe is for pot roast. While the mix of ingredients sounds weird, trust me, it's to die for. 1 pckg. of brown gravy mix, 1 pckg. of Italian dressing mix, 1 pckg. of Ranch dressing mix. Mix those three with about 2 1/2 - 3 c. water. Dump over the roast and cook on low all day. We add carrots & potatoes later in the afternoon so they don't turn to mush. It's cooking at home right now and I am so looking forward to dinner tonight.

I may have solved your "soupiness" dilemma... If you add 1 CUP of flour to the peaches, & 1 TABLESPOON of flour to the topping... it is NOT soupy! I know because I did that... NOT on purpose! Also not as tasty though.

I love the crockpot and my favorite dessert in it is chocolate pudding cake. It comes out like a gooey-spoon bread and it is just wonderful, especially with ice cream. You eat it in a bowl- not like a typical slice of cake.

I love peach cobbler too!
