Salsa: Good enough to eat with a spoon

1 can (28 oz) whole tomatoes with juice
2 cans (10 oz) Original Rotel (mild)
1/4 cup chopped onion
1 clove garlic, minced
1 jalapeno diced
1/2 tsp. salt
1/4 tsp. sugar
1/4 tsp. ground cumin
1/2 cup fresh cilantro, chopped
juice of one lime

Combine all ingredients in a food processor.  Pulse about 15 times.  Adjust seasonings to taste.
Refrigerate for at least 1 hour.

This is restaurant quality.  Seriously, you will want to open your own Las Palmas.
It makes about a quart, so there is plenty to eat when the kids are in bed share.

Okay, so I got a new food processor for Christmas, and I think I've found the first use for it! This family LOVES salsa (okay, well my daughter may have something else to say about that, but...)
We LOVE trying out new salsa recipes. Thanks for this one, and thanks for the shout out to Las Palmas (my son's fav restaurant).

This looks delicious! Several years ago a friend gave me a recipe for salsa, and that's when I learned the power of fresh cilantro--doesn't it make a world of difference? But that recipe calls for fresh tomatoes. I love recipes that call for canned goods--so easy to keep on hand! Thank you for sharing this!

I love this recipe! I got it from Pioneer Woman. It is our family's favorite. I can't keep it made up. :-)
